It's the season of giving!
4 tablespoons (56 grams) unsalted butter
8 ounces (225 grams) semisweet or bittersweet chocolate coarsely chopped
1/2 cup (100 grams) granulated white sugar
2 large eggs
2 teaspoons pure vanilla extract
1 1/2 cups (210 grams) all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking powder
Topping:
In a stainless steel bowl, over a saucepan of simmering water, melt the chocolate and butter. Remove from heat and set aside. In the bowl of your electric mixer, beat the eggs and sugar until thick, pale, and fluffy. (When you slowly raise the beaters the batter will fall back into the bowl in slow ribbons.) At this point beat in the vanilla extract and then stir in the melted chocolate mixture. In a separate bowl whisk together the flour, salt, and baking powder. Add dry ingredients to the chocolate mixture, stirring just until incorporated. Cover with plastic wrap and refrigerate until firm enough to shape into balls (3-4 hours or overnight). Preheat oven to 325 degrees F (170 degrees C) and place rack in center of oven. Line two baking sheets with parchment paper, and set aside. Place the confectioners sugar in a shallow bowl. With lightly greased hands, roll a small amount of chilled dough to form a 1 inch (2.54 cm) diameter ball. Place the ball of dough into the confectioners sugar and roll the ball in the sugar until it is completely coated and no chocolate shows through. Gently lift the sugar-covered ball, tapping off excess sugar, and place on prepared baking sheet. Continue forming cookies, spacing about 2 inches (5 cm) apart on baking sheets. (If you find the dough getting too soft for rolling into balls, return to the refrigerator and let chill until firm.) Bake cookies for 8 to 10 minutes or just until the edges are slightly firm but the centers are still soft. (For moist chewy cookies do not over bake. Over baking these cookies will cause them to be dry.) Remove from oven and place on a wire rack to cool. These cookies are best eaten the day they are baked. Makes about 3 dozen cookies. Above is what they look like when they are done. SOOO GOOD!! I made them over the weekend. They are so much better the day you make them.. but trust me.. they are awesome any old time! And.. they are SOOOO EASY! Have a very happy Christmas Eve Eve!! til next time- KARLA =) |

Life lessons
Dance was also bittersweet last night. It was the last class for another couple of weeks. That is because next Thursday is Christmas Eve and the Thursday after that is New Years Eve. So I won’t be at dance class until next year!! =(
Every year, each “Starduster” (that is what we are called) is given a Christmas present that Mrs. Lathrop picks out. Each year, we open our present (usually a gorgeous piece of jewelry) and we get in line to hug/kiss/thank Mrs. Lathrop. This year was different.
After class, the head teacher announces that this was the last gift from Mrs. Lathrop. She had actually picked out this gift on the very day that she passed away. This just goes to show her integrity and willingness to always do for others before herself. Even on her deathbed, she was doing for others. What an incredible woman.
So she picked out a beautiful silver necklace. It looks like this..
I teared up a little bit. It’s bittersweet you know. But, she had so any Christmas’s (about 25 of them) without her husband, Mack. So now, she is enjoying her Christmas with him… and I can rest assured that she is happier. Without a doubt.
So, that is something to smile about =)
3. Life is too short to waste time hating anyone...
4. Your job won't take care of you when you are sick. Your friends and parents will. Stay in touch.
6. You don't have to win every argument. Agree to disagree.
7. Cry with someone. It's more healing than crying alone.
8. It's OK to get angry with God. He can take it.
9. Save for retirement starting with your first paycheck.
10. When it comes to chocolate, resistance is futile.
11. Make peace with your past so it won't screw up the present.
12. It's OK to let your children see you cry.
13. Don't compare your life to others. You have no idea what their journey is all about.
14. If a relationship has to be a secret, you shouldn't be in it
15. Everything can change in the blink of an eye. But don't worry; God never blinks.
16. Take a deep breath. It calms the mind.
17. Get rid of anything that isn't useful, beautiful or joyful.
18. Whatever doesn't kill you really does make you stronger.
19.. It's never too late to have a happy childhood. But the second one is up to you and no one else.
20. When it comes to going after what you love in life, don't take no for an answer.
21. Burn the candles, use the nice sheets, wear the fancy lingerie. Don't save it for a special occasion. Today is special.
22. Over prepare, then go with the flow.
23. Be eccentric now. Don't wait for old age to wear purple.
24. The most important sex organ is the brain.
25. No one is in charge of your happiness but you.
26. Frame every so-called disaster with these words 'In five years, will this matter?'
27. Always choose life.
29. What other people think of you is none of your business.
31. However good or bad a situation is, it will change.
32. Don't take yourself so seriously. No one else does.
33. Believe in miracles.
34. God loves you because of who God is, not because of anything you did or didn't do.
36. Growing old beats the alternative -- dying young.
37. Your children get only one childhood.
38. All that truly matters in the end is that you loved..
39. Get outside every day. Miracles are waiting everywhere.
40. If we all threw our problems in a pile and saw everyone else's, we'd grab ours back.
41. Envy is a waste of time. You already have all you need.
42. The best is yet to come.
43. No matter how you feel, get up, dress up and show up.
44. Yield.
45. Life isn't tied with a bow, but it's still a gift.

My Christmas List
Yes, I would really love to have a blender because I am in love with smoothies, milkshakes, protein shakes... you name it.
And last but not least, a gift certificate to Victoria's Secret. I am in desperate need of new bras. This whole weight loss thing has brought me from a 40DD to a 34C. Whoa! Definitely in need of new bras. Big time. Way overdue.
