I know, I know... I have not blogged in over a week. This engagement stuff has been crazy. Visiting family almost everyday and not having much time to breath. Although, I have gotten some awesome meals in...minus the not so awesome BBQ's with cake, and salads filled with mayo...and the occasional hot dog and hamburger.
My life, as I said, has been crazy the past week... but it is still so exciting. I am the happiest I've ever been. I have even lost some weight since I started back up with WW. I feel like my old self again. Scott and I working as a team has definitely helped.
So here are some things that I have been eating:
*Fiber One Bars (any fiber I can get, I eat)
*Haystack Cookies!! -- Fiber one cereal covered in melted chocolate that hardens into a cookie.
*Boca Burgers-- Yes, I do not eat real hamburgers if at all possible. Veggie burgers are lower in points and healthier. And... surprisingly... very yummy!!
*Whole wheat everything... (bread, tortilla chips, rolls, pasta.... everything)
*Sandwich thins-- Greatest invention ever. Cuts points almost in half.
*Ground Turkey-- I make sloppy joes, hamburgers, meatballs and even chili with ground turkey instead of beef.
*Water!!! Nuff said!
*Nuts! I eat a lot of nuts. Protein, filling... and... their yummy!
*Fruits and vegetables.... we have a garden... so ... I'm eating squash and tomatoes like a mad woman. I try to incorporate veggies into every dinner meal.
*I'm trying new things. --- This is KEY to losing weight. Don't just do the same old routine. I try so many different recipes. Some I hate, Some I love.
Here are some new ones...
1. Asparagus and Mushroom Risotto
What you will need:
- bundle of asparagus
- one cup uncooked rice
- one package sliced mushrooms
- fat free chicken broth
- salt/pepper
- light margarine
1. Cut asparagus into about 2 inch pieces. Place in skillet over medium heat with one tablespoon margarine. Cook until somewhat soft. About 5-6 minutes.
2. At same time, begin cooking rice. Follow instructions on rice box.
3. When asparagus is cooked, place in cold water to retain the green color.
4. Put sliced mushrooms into same skillet that asparagus was in. Add another table spoon of margarine and cook. About 2-4 minutes.
5. Pour cooked asparagus and mushrooms into the pot of cooked rice.
6. Add one cup of chicken broth to the mix... or as much as needed to make the mixture somewhat soup-like.
7. Stir and let simmer until bubbles form.
8. Add salt and pepper for taste.
*This recipe was simple, but did not have enough flavor. I wasn't too fond of it and Scott wasn't either. To make this taste better, I added a few more spoons of butter ...which was fine because one serving (about a fist size) was only 4 points. Pictured below.
2. Baked Ziti
Very simple recipe. It's just a twist on what a regular baked ziti recipe would be.
1. Preheat oven to 350.
2. Boil water.
3. Pour entire box of whole wheat pasta into boiled water, cook as instructed on box.
4. Take out ground turkey (about half a pound) and cook on a large skillet/frying pan.
5. Drain any fats/oils.
6. Add crushed tomatoes to the mix. About 14 oz.
7. Stir and let simmer.
8. Add any seasonings you would like...oregano, dried basil.
9. Spray baking dish with a light cooking spray and put some of the mixture onto the bottom. Have pasta ready and put some pasta on top. Then add more of the mixture, and pasta on top of that.
10. Finally, add the last bit of mixture and sprinkle the top with shredded skim mozzarella cheese. I used the WW kind.
11. Cook for about 25-30 minutes, or until lightly browned.
* I even added mushrooms into this, because I love mushrooms... but you don't have to. I loved this dish and so did Scott. This was a huge hit and 5 points a serving. Makes 16 servings!!
3. Meatball Grinders.
SIMPLE, SIMPLE, SIMPLE!!
Just buy or make turkey meatballs... Cut them into fourths.
Put on a skillet.... add crushed tomatoes, oregano, and dried basil... stir around, let simmer... stick a few into a sandwich thin....and ... WOLLAAA... Healthy turkey meatball grinders.


Sorry the pictures are so dark!! With this recipe, I even added some hot sauce to give it a little kick. This recipe was a huge hit with Scott. Sooo good!!
In other news... This weekend was pretty fun. I got to see my friend Amanda before she leaves for Europe for a whole year. I hope to have her in my wedding and I asked her if she would and she said YES! Woohooo! She should be back from Europe by then and hopefully not going on any other crazy trips. Also over the weekend, I got a new cell phone. I now share a plan with Scott. Helps us to save money this way and also to kind of be on our own a little more. I love my phone! It's pink!! =)
And even more exciting than that... I have an amazing friend who I talk about all the time on here. Marisa Pellerin. =)
She just told me last night after I got out of work that she has won tickets for her, and Scott and I to go see Train (Scott and I's favorite band) perform on the Today Show at NBC studios in NYC.... On my birthday!!! Which is August 6th !!! I am so excited!!!!!
I have some amazing friends. =)
